Atlantic Beach Pie

This is a favorite desert of ours for summer time. It is tart and sweet and salty and crunchy all at the same time. If you like yours extra tart just leave off the whipped cream like I do. If you want extra sweetness pile on the whipped cream. 

Atlantic Beach Pie

Crust 

1 1/2 Sleeves Saltine Crackers
4 tbs sugar
8-10 tbs butter, softened

Filling

1 (14oz) can sweetened condensed milk
4 lg egg yolks
1/2 cup fresh lemon or lime juice (I always do 1/2 lemon, 1/2 lime)

Sweetened Whipped Cream

1 1/2 Cups Heavy Whipping Cream
2 TBS Powdered Sugar

  1. Preheat oven to 350 degrees
  2. Crush Saltines, add sugar and knead in butter
  3. Press mixture into pie pan and refrigerate 15 minutes
  4. Bake 16-18 minutes until crust colors a bit
  5. Remove crust and cool slightly
  6. Beat together eggs and sweetened condensed milk, then beat in juice; make sure they are throughly mixed.
  7. Immediately pour into pie pan and bake 15-18 minutes
  8. Let cool on a pie rack, then chill
  9.  Make whipped cream and add to pie
  10. Pie must be completely cold to slice
